Or as it’s also known, clean the fridge out mac ‘n’ cheese. Inspired by Jamie Oliver’s new mantra for home cooking, we raided our food supplies to discover what we had lying around to make dinner. My wife hit on the idea of mac ‘n’ cheese with mushrooms and spinach. Add in smoked cheeses that had been maturing for a while and we had ourselves a fantastic side dish.

Smokey Bourbon Baked Beans
I watched Jamie Oliver’s “American Road Trip” a couple of weeks ago. One recipe that stood out was when he cooked baked beans cowboy-style whilst camping in the great outdoors. Looked great with strips of steak seared on a cast iron pan over a campfire.
So we decided to made our own version at home … very simple and definitely several notches above your standard tin of baked beans.
